If you’ve been following along for a while now, you know that I LOVE salmon. It’s easily my favorite fish and honestly probably my favorite protein to cook. This color and the marbling of the fish are due to the special diet that they feed their fish. This diet is rich in marine ingredients making for some great looking salmon that’s also high in protein, vitamins, and Omega 3. All MOWI salmon is also free of GMOs, nitrates, and antibiotics and certified for food safety.

I basically knew that I wanted to cook and eat this salmon ASAP because it looked that good, so a breakfast recipe was in order. I thought it would play perfectly into an easy-to-make, flavor-packed breakfast hash, and boy was I right. Here’s what you’ll need:
(Serves 2)

-MOWI Atlantic Salmon Royal Portions 2PK
-12 oz potatoes, cut into ½” cubes
10-12 mushrooms, sliced
-1/4 red onion, chopped
-2 garlic cloves, chopped
-1 cup arugula
-2 eggs
-3 sprigs of dill
-1/4 lemon, juiced
-salt and pepper to taste

Instructions:

  1. Season the salmon with salt and pepper, and bake in a preheated 425 degree oven for 12-14 minutes until cooked through.

  2. In the meantime, heat up 2 tbsp avocado oil on the stove top. Add in the potatoes and cook for 10 minutes, stirring regularly.

  3. Add in the mushrooms, onion, and garlic, season with salt and pepper, and cook for an additional 10 minutes, stirring regularly.

  4. In the meantime, cook two eggs on the stove top over medium heat until the white is cooked through (about 5 to 8 minutes).

  5. Turn off the heat under the potato and vegetable mixture, and mix in the arugula, dill, lemon juice, and more salt and pepper.

  6. Using a fork, shred the salmon into smaller pieces.

  7. Add the salmon to veggies and gently mix it in.

  8. Split the mixture between two bowls, and top each with an egg.

  9. Serve and enjoy!

One of the prime times that a one-pan meal comes in handy for me is at breakfast. You don’t have to wake up an extra hour early every day to cook and can instead just pop your prepped breakfast in the microwave (or eat it cold) and go. That’s why I love these mixed berry baked oats. They require minimal ingredients, most of which you probably already have on hand. The product I use in this recipe, the Mixed Berry Smart Greens, is a blend of organic greens, veggies, superfruits, antioxidants, digestive enzymes, organic adaptogenic mushrooms, organic sea greens, and prebiotic Inulin. Here’s What You’ll Need:

-2 cups rolled oats
-1 tsp baking powder
-1 scoop Earth Genius Mixed Berry Smart Greens
-Pinch of salt
-1 ½ cups milk
-2 eggs
-3 Tbsp butter (or coconut oil), melted and divided
-1/4 cup maple syrup (or honey)
-1 cup strawberries, sliced
-1 cup blackberries, sliced 

Instructions:

  1. Mix the rolled oats, baking powder, Earth Genius Smart Greens, and salt in a large bowl.

  2. In a separate bowl, mix together the whisked eggs, milk, 1.5 tbsp butter and maple syrup.

  3. Mix the dry mixture with half of the berries (reserve half to top the dish), and evenly spread throughout a cast iron skillet (or 9x9 baking dish).

  4. Pour the wet mixture over the dry and top with the reserved berries.

  5. Bake in a preheated 400 degree oven for 35-40 minutes.

  6. Drizzle the remaining 1.5 Tbsp of melted butter over the top of the oats.

  7. Serve, and enjoy!

Mushroom and Spinach Stovetop Oats with Flahavan’s Irish Oatmeal

Oatmeal is one of my favorite ways to start the day. It’s super easy and fast while also filling and nutritious. Plus, you’ll never find yourself getting bored because it’s so versatile. I love packing veggies into my breakfasts, and mushrooms and spinach complement Flahavan’s Irish Oatmeal perfectly. Add in some garlic and parmesan for that extra flavor, and we have ourselves a meal! Easy 5-minute Irish Steel Cut Oats with minimal ingredients; it doesn’t get much better!

Here’s what you’ll need:

-1/3 cup Flahavan’s Irish Steel Cut Oatmeal
-2/3 cup milk of choice or water (I usually like to split it half and half)
-4 mushrooms, sliced
-1 handful of fresh spinach (~1 cup)
-1 clove garlic, chopped
-2 tbsp shredded or shaved parmesan
-Salt, pepper, and red pepper flakes (optional) to taste

Instructions:

  1. In a small pot on the stovetop, combine the oats and milk and/or water over medium high heat, and bring to a boil.

  2. Once boiling, turn down the heat to medium, and cook, stirring regularly, for about 5-7 minutes until the liquid absorbs into the oats.

  3. In the meantime, heat up 1 tbsp avocado or olive oil in a pan over medium high heat.

  4. Once hot, add in the sliced mushrooms, and cook for 3-5 minutes.

  5. Mix the garlic and spinach into the pan of mushrooms, and cook for an additional minute or two until the spinach wilts.

  6. Mix the veggies, parmesan, salt, pepper, and red pepper flakes (optional) into the cooked oats until the cheese is fully melted.

  7. Serve, top with your favorite toppings, and enjoy!

My go-to topping is a fried egg. The runny yolk mixed with savory oats just cannot be beat! I also love to add fresh avocado. Play around, and see what works for you! Let me know how you enjoy this recipe in the comments below!

Here’s What You’ll Need:

  • 1 ripe banana

  • 2 eggs

Instructions:

  1. Mash the banana using a fork or hand mixer.

  2. Add in two whisked eggs and 1 scoop Earth Genius Vanilla Chai Superfoods Supreme, and mix until well combined.

  3. Ladle pancake-sized pours of the mixture onto a preheated, greased pan over medium high heat on the stove top.

  4. Cook for 3-4 minutes until the bottom is cooked, flip and cook an additional 3-4 mins.

  5. Repeat until all the batter is used.

  6. Top your pancakes with your favorite toppings (I suggest nuts, fresh fruit, nut butter and/or maple syrup), and enjoy!

To celebrate the launch, I decided to make a fun and delicious recipe using their new sliced mozzarella (and turkey pepperoni). Pizza is always an easy and delicious go to, and breakfast is probably my favorite meal of the day. So I figured why not combine them? I whipped up the perfect, easy pizza frittata for two! It packs in the protein and makes it easy to enjoy guilt-free pizza for breakfast!

Here’s What You’ll Need:

-4 eggs
-1 slice Applegate Sliced Mozzarella
-6 pieces Applegate Turkey Pepperoni
-1/4 cup canned diced tomatoes
-1 cup fresh arugula
-2 cloves fresh garlic, chopped
-3-4 fresh basil leaves, chopped
-1/4 tsp Italian seasoning
-1 tbsp EVOO
-Salt and pepper to taste

Instructions:

1. In a small oven-friendly skillet, heat up the EVOO over medium high heat.
2. Add in the chopped garlic and arugula, and cook for 2-3 minutes until the garlic starts to turn golden and the arugula cooks down.
3. In a bowl, whisk the eggs with the Italian seasoning, salt, and pepper, and pour the mixture over the arugula and garlic.
4. Cover and cook for 3-5 minutes on the stovetop until the sides are cooked (but the center is still raw).
5. Place the pan in the oven on broil, and cook for about three minutes. The eggs should be cooked on the top but still a light yellow.
6. Remove the pan, top the eggs with the diced tomatoes, sliced cheese (feel free to add in an extra slice if you’d like!), and pepperoni.
7. Place the pan back in the oven for another 3 minutes or so until the cheese melts and the eggs begin to turn golden brown.
8. Remove the pan, and top with fresh basil. Slice the frittata in half, serve, and enjoy!
