Chicken Burrito Skillet with RiceSelect

Things have been hectic over here between moving, settling in, and a busy work schedule! It’s been hard to find the time and energy to cook as much, especially after a long day. That’s why easy, one-pan meals have become a life saver. Throw it all in a pan followed by a minimal and easy clean up? Yes please! My favorite has been this chicken burrito skillet. I’ve literally been making it at least once a week.

Flavorful and packed with protein, this meal is sure to please the entire family. Trust me, you’ll have everyone licking their plates. Naturally, RiceSelect Texmati was the perfect base for my burrito skillet. Add in some protein, delicious seasonings, and fresh veggies, and we have ourselves a meal! So let’s get to it.

Here’s what you’ll need:
-2 tbsp avocado oil
-1 lb chicken breasts, cut into 1” cubes
-1 small yellow onion, chopped
-2 tbsp taco seasoning
-15.5 oz can black beans, strained and rinsed
-1/2 cup RiceSelect Texmati Rice 
-1 cup water
-1/2 cup salsa
-3/4 cup shredded Mexican cheese, separated
-1 tomato, chopped
-1 cup lettuce, chopped
-1/2 avocado, cubed
-Salt and pepper
-Chopped fresh cilantro as desired

Instructions:

  1. Add the avocado oil to a large pan over medium high heat. 

  2. Add in the chicken and cook for 3 mins.

  3. Mix in the chopped onion, taco seasoning, black beans, rice, and water, and bring to a boil.

  4. Cover and cook for 10-12 minutes until the water is absorbed into the rice.

  5. Mix in the salsa, ½ cup of shredded cheese, and salt and pepper to taste.

  6. Top the mixture with the remaining cheese, lettuce, tomato, avocado, and cilantro.

  7. Serve and enjoy!

Mushroom and Spinach Stovetop Oats with Flahavan’s Irish Oatmeal

Oatmeal is one of my favorite ways to start the day. It’s super easy and fast while also filling and nutritious. Plus, you’ll never find yourself getting bored because it’s so versatile. Whether it’s baked or on the stovetop, topped with fruit and nut butter or a savory twist, it’s always a delicious was to get the day going. Savory oats are my personal favorite way to enjoy oatmeal, and today I’m going to share my favorite savory oat recipe with you all!

The most important part of a great oatmeal dish is, well, the oats duh! That probably goes without saying, but it is so, so true! That’s why I use Flahavan’s Irish Oatmeal for this recipe. I love packing veggies into my breakfasts, and mushrooms and spinach complement Flahavan’s Irish Oatmeal perfectly. Add in some garlic and parmesan for that extra flavor, and we have ourselves a meal! Easy 5-minute Irish Steel Cut Oats with minimal ingredients; it doesn’t get much better!

Here’s what you’ll need:

-1/3 cup Flahavan’s Irish Steel Cut Oatmeal
-2/3 cup milk of choice or water (I usually like to split it half and half)
-4 mushrooms, sliced
-1 handful of fresh spinach (~1 cup)
-1 clove garlic, chopped
-2 tbsp shredded or shaved parmesan
-Salt, pepper, and red pepper flakes (optional) to taste

Instructions:

  1. In a small pot on the stovetop, combine the oats and milk and/or water over medium high heat, and bring to a boil.

  2. Once boiling, turn down the heat to medium, and cook, stirring regularly, for about 5-7 minutes until the liquid absorbs into the oats.

  3. In the meantime, heat up 1 tbsp avocado or olive oil in a pan over medium high heat.

  4. Once hot, add in the sliced mushrooms, and cook for 3-5 minutes.

  5. Mix the garlic and spinach into the pan of mushrooms, and cook for an additional minute or two until the spinach wilts.

  6. Mix the veggies, parmesan, salt, pepper, and red pepper flakes (optional) into the cooked oats until the cheese is fully melted.

  7. Serve, top with your favorite toppings, and enjoy!

My go-to topping is a fried egg. The runny yolk mixed with savory oats just cannot be beat! I also love to add fresh avocado. Play around, and see what works for you! Let me know how you enjoy this recipe in the comments below!

Here’s What You’ll Need:

  • 1 scoop Earth Genius Vanilla Chai Superfoods Supreme

  • 1 ripe banana

  • 2 eggs

Instructions:

  1. Mash the banana using a fork or hand mixer.

  2. Add in two whisked eggs and 1 scoop Earth Genius Vanilla Chai Superfoods Supreme, and mix until well combined.

  3. Ladle pancake-sized pours of the mixture onto a preheated, greased pan over medium high heat on the stove top.

  4. Cook for 3-4 minutes until the bottom is cooked, flip and cook an additional 3-4 mins.

  5. Repeat until all the batter is used.

  6. Top your pancakes with your favorite toppings (I suggest nuts, fresh fruit, nut butter and/or maple syrup), and enjoy!

Vegetarian Stuffed Peppers with Green Valley Foods

So let’s get to it!

Here’s what you’ll need:
-4 bell peppers, halved and de-seeded
-1/2 red onion, chopped
-15.5 oz bag Green Valley Black Beans -15.25 oz can Green Valley Corn
14.5 oz can diced tomatoes
-2 tbsp taco seasoning
-1/2 cup shredded cheddar cheese plus more -1 green onion, chopped

Instructions:

1)  Preheat your oven to 425 degrees. On a parchment lined baking sheet, bake the halvedpeppers for 15 minutes.
2)  In the meantime, strain the black beans and corn.
3)  Mix together the beans, corn, diced tomatoes, red onion, taco seasoning, and cheesetogether in a large bowl.
4)  Remove the peppers from the oven, and fill each pepper with the mixture.
5)  Top each pepper with a sprinkle of cheese, and return them to the oven for 15 minutes.
6)  Remove the peppers, and top each with green onion.
7)  Serve, and enjoy!

To celebrate the launch, I decided to make a fun and delicious recipe using their new sliced mozzarella (and turkey pepperoni). Pizza is always an easy and delicious go to, and breakfast is probably my favorite meal of the day. So I figured why not combine them? I whipped up the perfect, easy pizza frittata for two! It packs in the protein and makes it easy to enjoy guilt-free pizza for breakfast!

Here’s What You’ll Need:

-4 eggs
-1 slice Applegate Sliced Mozzarella
-6 pieces Applegate Turkey Pepperoni
-1/4 cup canned diced tomatoes
-1 cup fresh arugula
-2 cloves fresh garlic, chopped
-3-4 fresh basil leaves, chopped
-1/4 tsp Italian seasoning
-1 tbsp EVOO
-Salt and pepper to taste

Instructions:

1. In a small oven-friendly skillet, heat up the EVOO over medium high heat.
2. Add in the chopped garlic and arugula, and cook for 2-3 minutes until the garlic starts to turn golden and the arugula cooks down.
3. In a bowl, whisk the eggs with the Italian seasoning, salt, and pepper, and pour the mixture over the arugula and garlic.
4. Cover and cook for 3-5 minutes on the stovetop until the sides are cooked (but the center is still raw).
5. Place the pan in the oven on broil, and cook for about three minutes. The eggs should be cooked on the top but still a light yellow.
6. Remove the pan, top the eggs with the diced tomatoes, sliced cheese (feel free to add in an extra slice if you’d like!), and pepperoni.
7. Place the pan back in the oven for another 3 minutes or so until the cheese melts and the eggs begin to turn golden brown.
8. Remove the pan, and top with fresh basil. Slice the frittata in half, serve, and enjoy!
